Angelica is an umbelliferous plant used in cooking as a flavoring agent and for its medicinal properties. Its fleshy roots can be used as food, while strips of young angelica stems and midribs – which are bright green in colour – are sold as decorative and flavoursome cake decoration material. Its seeds and roots are sometimes used in the flavouring of gin and Chartreuse.
