Cinnamon
is an aromatic spice made from the peeled, dried and rolled bark of the
Lauraceae tree. It is principally used in cookery as a condiment and flavouring
material, mostly in the preparation of desserts, chocolate, spicy candies
and liqueurs. In the Middle East, it is often used in savoury dishes of
chicken and lamb, whilst in America, cinnamon and sugar are often used to
flavour cereals and fruits, especially apples. It can also be used in pickling. |
