Fennel is a highly aromatic herb which is widely cultivated for its strong, anise-flavoured leaves and seeds. Florence fennel, a small variety with a swollen leaf base, is often eaten as a vegetable, and is one of the three herbs traditionally used in the preparation of absinthe.
