Lamb is the meat of a sheep which is younger than one year old. The meat ranges from pale pink to dark red, but the colour and flavour of the meat varies according to where the animal has been raised. There are six basic cuts of lamb, being shoulder, breast, shank, scrag, loin and leg, each being suited to different types of cooking.
