The pheasant is a large, long-tailed game bird. The males are highly ornate with brightly-coloured plumage, while the females are usually smaller and less showy. The meat is a dark pink and, particularly in young birds, is quite delicate. The most common way of cooking the meat is by roasting, although it will need constant basting to avoid the meat drying out.
