The sturgeon is a very large, primitive fish found predominantly in seas and rivers of the Northern Hemisphere. When eaten fresh the flesh is quite firm, well flavoured but quite oily. It can also be dried and smoked or salted. The roe of the sturgeon are pickled to make caviar.
